A Bunch of Roses




I love making cakes for friends and family, so since my work's Christmas party conveniently coincided with my last Wilton class, I decided to make a cake for the girls to enjoy. And being hard working night-nurses, I thought they deserved something special.



I chose a butter cake that I layered and filled with mango and custard, before covering the whole thing in almond and vanilla buttercream. It was then brought into class to be decorated. We have been practicing making buttercream roses over the last few classes, and this week we finally got to finish them off, and as I love pink, it was an easy task to choose the colour.



We got to choose between a couple of designs involving roses for our cake. I went with a bouquet of three pink roses and added in two small buds, some leaves and a bow to finish it all off. My buttercream had softened a little in my hand, so my roses ended up being a bit more open then originally planned, but since they still looked good, I left them that way.

The cake was a big hit, and I was so happy to see that they all enjoyed eating it.

Thank you to all the fabulous night nurses at Noarlunga Hospital. You do such a wonderful job, and you all deserve a bunch of flowers!

Send in a clown...



One of my goals when I signed up to do the Wilton classes was to be able to do 3D decorations with buttercream. It's great to be able to make edible decorations that actually taste nice, so you don't have to pick things out of your cake to be able to eat it.

For our last November class the project was to make a clown cake.
I made an orange flavoured sponge, and filled it with crushed pineapple. It was then covered with vanilla and almond buttercream before being brought to class on the Saturday afternoon.



To get the striped effect for the clown suits and the borders we painted the inside of the piping bag with colouring paste, and filled it with white buttercream.
The entire clown suit was piped using a medium size star tip (Wilton tip #16), and a bit of pressure. Then we piped some hands and feet, and a few buttons, before applying the heads .
The boarders were made using the left-over buttercream in the bag, to get the same striped effect. Add some balloons for the finishing touch, and the result is an awesome 3D clown cake perfect for any kids birthday.

I can sing a rainbow too (from Marit's World)



After days of melting away in the sun, the cool change finally came, and brought with it some much needed rain. Together of course, sun and rain makes rainbows, which brings me to the subject of my post.



For my Wilton class today our project was to make a rainbow themed cake decorated with buttercream.
The cake was a vanilla sponge, filled with a passion fruit custard, and then covered with a layer of lemon buttercream. The decorating was done in class. As the cake was to be for a baby forum picnic, I chose to use pastel colours for a light summery feel, and with pink, yellow, green and blue, both gener specific and gender neutral colours were represented.

Pretty in Pink

Those of you that read my other blog might recognize this post from Marit's World, but as it has to do with my cakes I though it best to repost it here as well.


I'm what you can classify as a pink girl. I love pink, and it always make me feel happy. So when the order came for wedding cake with the theme pink and silver, it was almost too good to be true.




The cake was for the wedding of Samantha and Marcus, and they wanted a square, three tier cake to serve about 90 guests. We decided on a dense, rich chocolate mud cake, with soft pink icing and hot pink trimmings to match the theme, and with silver as the accenting colour.



We wanted the cake to be totally edible, so for decoration we went with silver coloured, sugar beads as the main feature on the cake. To break it up a bit I decided to use royal icing in the same shade of pink as the sugar paste for the second tier. The effect was great, and the design was beyond approved by an excited bride at pick up time.





Samantha and Marcus, I wish you all the happiness in the world. And I hope you have a long and wonderful life together.

A little mouth-full




For parties or picnics, you can never go wrong with cupcakes. It's always something special about getting your own little cake that you don't have to share with anyone. And even the simplest cupcake can look great with the right "accessories". 



There are so many possibilities when it comes to decorating cupcakes, which makes them perfect for weddings, as they can be made to suit practically any theme. These pink and silver ones would be great in a classic cupcake tower with a small top cake to cut.



These simple buttercream swirls with silver balls can be done in almost any colour, and will always look great. A lighter version of this blue-green colour would be perfect for a "Tiffany's" theme.

Really, the only limit to cupcakes is our own imagination.
